Rainbow chocolate balls
How do you make food more on-trend, cute and portable? Roll it into balls! These ones couldn’t be simpler to make, and they look a treat. They have extra fibre from the wheatmeal biscuits and dried fruit as well the nutritional bonus of Pediasure.

Ingredients:
10 scoops Pediasure powder (chocolate)1 packet (250g) wheatmeal biscuits
¼ cup cocoa powder (or raw cacao)
¼ cup desiccated coconut
8 (medjool) dates, pitted
1 x 395g can sweetened condensed milk
2 Tablespoons 100’s & 1000’s
Method:
- Process biscuits, Pediasure, cocoa and coconut into a rough powder.
- Add dates and process until well combined.
- Add coconut oil and condensed milk until mixture comes together.
- Roll tablespoons of mixture into a ball press one side in 100’s & 1000’s.
- Place on a tray lined with baking paper and chill before serving.
- Store in the fridge for up to 2 weeks. Can be frozen.
TIPs:
- Great for the lunchbox
- For bigger kids not into 100’s & 1000’s, roll balls in coconut instead
- You could swap the wheatmeal biscuits for any sweet biscuit
